LOCAL FAVORITE: SALTUS RIVER GRILL
It might seem odd to order a steak in a coastal town. After all, Beaufort prides itself on seafood. Playing to that tradition, Saltus River Grill is nautical to the hilt--portholes twinkle from behind the bar, and brass and teak shine from every corner. Obligingly, I ordered a lot of fish off the menu (including shrimp, oysters, and dorado), but it was the tender, life preserver-size strip steak that won the evening. 802 Bay Street, Suite C; www.saltusrivergrill.com or (843) 379-3474. Fine Dining in Beaufort Is Kicked Up a Notch

... You may not know it but there's a revolution occurring in Beaufort

Admittedly, it's not as earth shaking as the era of Civil War cannon fire that resonated around this quiet coastal town. But this "coup de taste" is, nevertheless quite notable.

"For a long time, those looking for fine-dining options in Beaufort were basically limited in choice to the Beaufort Inn, Bistro 205 or the more casual Plums," explained Bistro 205 chef/owner Gary Lang. "The arrival of Saltus River Grill last summer really changed all of that - almost overnight."

Step into the sharp and sophisticated open air setting of Saltus, found on Bay Street overlooking Waterfront Park, and you could easily convince yourself that you are in a trendy Manhatan or Los Angeles bistro. A can't-go-wrong menu packed with specialty entrees, clever appetizers and raw bar items has made Saltus a quick favorite among Beaufort guests and residents.

... Take, for example, Saltus, the hot new restaurant in the cool old building at the end of Bay Street’s business district. Saltus is the brain child of Lantz Price, owner and proprietor of Plums, a downtown culinary landmark in its own right. But make no mistake, Price’s long-awaited second “child” bears no resemblance to the first.

While Plums is hip in its own cozy way, Saltus is the epitome of….well, smooth is the word that comes to mind. Don’t let the label “River Grill” conjure up visions of quaintness. You won’t see any anchors on the walls here, no ropes or bouys, no grizzled old salt behind the bar spinnin’ yarns. With its stunningly sleek, minimalist décor and it chicly-clad wait staff, Saltus takes you out of Beaufort the minute you walk through the door, setting you down squarely in Atlanta…Chicago… New York, even. (And as much as I love our little burg, it’s fun to get away!)

So far, I’ve only been for drinks and appetizers, but I can say with authority that the sushi is quite good and the bartenders friendly. (Here’s a shout-out to Joey. I promised.) Word has it the food is superb – no shocker to Plums fans everywhere, nor to those familiar with the excellent work of head chef Jim Spratling. (For me, the food is almost beside the point. I’d go in there for the atmosphere alone. But then, I’m a shameless escapist...)
